Is produced by a recognized family of traditional cider-makers, which know from the inside the processes of elaboration, milling, preservation of the juices and bottling, counting also on the advice and expertise of prominent oenologists.
The origin of Matriarca is not just like any other, is a love story with a dream and an idea, is a project developed from the start by industry specialists, aiming to become a reference in a rapidly developing category: specialty cider.
Matriarca comes up in a very particular context, in which cider is growing strong and gaining ground, making this category of drinks the one that expands the most at worldwide level. Matriarca has a delicate and balanced taste, produced by perfectly toasted oak staves present in the maceration process. Is elaborated with juices extracted from a selection of Pink Lady and Granny Smith apples. The first variety adds acidity and sugar, the second, more acidity and freshness. The yeasts used are picked after an exhaustive experimentation process, required for a precise controlled temperature brew.
